Honey Sriracha Glazed Chicken Quarter w/ Rice

Serves 2


Ingredients

2 bone-in, skin-on chicken leg quarters

1/2 cup jasmine rice

1/3 cup honey

1/3 cup sriracha

1/4 cup soy sauce

1 tsp sesame oil

1 tbsp rice vinegar

2 tsp thyme

1 tbsp olive oil

Nonstick cooking spray

Salt, pepper, and garlic powder to taste


How-to:

1. Preheat oven to 350 fahrenheit.

2. In a medium-large saucepan or rice cooker, cook rice according to package instructions.

3. On an aluminum foil-lined baking tray, spray nonstick cooking spray and place chicken on tray. Coat chicken in olive oil, then season with salt, pepper, and garlic powder. Once oven is heated, bake chicken until internal temperature reaches 165 fahrenheit and skin is crispy.

4. While chicken is cooking, make sauce: in a medium saucepan over medium-low heat, add sriracha, soy sauce, and honey. Stir for 2-3 minutes, then add sesame oil, thyme, and rice vinegar and stir until consistency is smooth. Reduce heat to low and allow to simmer.

5. Once chicken is finished cooking, serve over rice and pour a good amount of sauce over entire plate.
