Spicy Western Omelette w/ Sour Cream & Salsa

Makes 2 omelets
Ingredients
4 large eggs
1/3 cup diced ham
1/2 yellow onion, sliced
2 tbsp diced jalapenos
4 tbsp monterey jack cheese
Sour cream
Pico de Gallo salsa
Salt & pepper to taste
Nonstick cooking spray
How-To
1. Whisk eggs in a medium mixing bowl, and season with salt & pepper. Set aside.
2. In a small frying pan, spray nonstick cooking spray and saute onions over medium heat until they begin to become translucent. Then, add jalapenos and ham. Saute everything together for 1-2 minutes, then empty the pan onto a small plate. Set aside, but keep stove on medium heat.
3. Re-coat pan with nonstick spray, then add whisked eggs to pan. Without scrambling but occasionally moving eggs so that they cook evenly, allow eggs to cook 3/4 of the way. Add monterey jack cheese over whole omelet, and once it begins to melt, add veggies & ham to pan as well.
4. Fold omelet in half, then slide off of pan onto a plate. Serve with a dollop of sour cream on top and pico de gallo salsa either on top or on the side.
