Mediterranean Herb-Spiced Beef w/ Tzatziki, Rice, Cucumbers, and Tomatoes

Serves 2
Ingredients
1 lb ground beef
3/4 cup basmati rice
3 tbsp pine nuts
1/4 cup fresh chopped parsley
1/4 cup fresh chopped cilantro
1 tsp coriander
1 tsp cumin
1 medium cucumber
2 roma tomatoes
2 tbsp olive oil
Salt, pepper, and garlic powder to taste
1/3 cup premade or homemade tzatziki
How-To
1. In a medium saucepan or rice cooker, cook rice according to package instructions. Allow to cook while preparing the rest of the meal.
2. Slice cucumber into thin slices, dice tomatoes, and coarsely chop parsley and cilantro; put aside.
3. In a small frying pan, turn heat to medium-high and toast pine nuts until lightly toasted; put aside. Turn burner off until it's time to cook the beef.
4. In a large mixing bowl, add all of the ground beef and season with coriander, cumin, salt, pepper, and garlic powder. Add parsley, cilantro, and toasted pine nuts, and thoroughly mix with the beef.
5. Shape beef into 1.5" balls.
6. Heat 2 tbsp olive oil in a large saucepan over medium-high heat, and add beef. Sear for 4-5 minutes until fully cooked and crisp on the outside.
7. Remove beef from pan, and serve over rice with tzatziki either on top or on the side. Plate with tomatoes and cucumbers.

Tip: This dish is great served with roasted green beans as an additional side (as pictured).
